Aunt Rosie’s Recipe

An easy dish for anyone to make is OLD FASHIONED POTATO PANCAKES. My mother used to make potato pancakes for my brother and me, and we loved them. You can use potato pancakes as a side dish to accompany an entree of meat, chicken or fish; or you can use potato pancakes as the main dish. It all depends on the variation you choose to create. First, let’s create the basic potato pancake.

INGREDIENTS: A large potato, a small onion, one egg, one half cup of flour, one cup of water.

• Peel the potato. If you have a grater, you can grate the potato and place it in a small mixing bowl. That will give you the consistency to make an even pancake. If not, you can slice and chop the potato into very small pieces.

• Dice the onion into small pieces and place it in the mixing bowl with the grated potato. Add salt and pepper. Break the egg and add it to the mixing bowl. Add the flour to the mixture. Add the water.

• Using a fork, mix up the contents of the bowl until you have a creamy mixture and all of the flour and remaining contents are not sticking to the side of the bowl. If you are using a frying pan that does not have a non-stick surface, grease the pan. It is not necessary if you are using one of the non-stick surfaces. Bring the frying pan to a medium temperature.

• You can make one large pancake or several small ones. The mixture from one potato will make four to five small pancakes. When the frying pan is at temperature you may spoon in three small pancakes. Allow them to cook for four to five minutes. At that point you should turn them over. The pancake should be browning slightly. Watching them closely, turn them again in three to five minutes. When they are cooked through (you may want to turn them a second or third time), set them aside on a plate and repeat the process until the mixture is gone.

VARIATIONS: This process can be used to make a meal out of the potato pancake. If you like, you can add just about anything to the mixture. Add ham and peppers (the peppers should be cooked until tender before adding them if you do not want them to be crunchy). Most leftovers can be diced into small pieces and added to the mixture. In any case, your individual taste is paramount in the decision process. The secret to having meals that aren’t dull is to EXPERIMENT. If you make a mistake, just be careful never to repeat that part of the process. Have fun and enjoy OLD FASHIONED (and simple) POTATO PANCAKES.
